Mexico’s demand for U.S. pork has soared in recent years, and 2025 was no exception. Pork exports to Mexico were record-large for the fifth consecutive year at 1.24 million metric tons, valued at $2.85 billion. But the U.S. Meat Export Federation (USMEF) continues to identify opportunities for further growth, and a good example is the relatively low percentage of pork dishes that are prepared at home, rather than in restaurants and other foodservice outlets.
Gerardo Rodriguez, USMEF regional director for Mexico and Central America, says consumer education programs, made possible through support from USDA and the National Pork Board, can play a key role in persuading retail shopper to purchase more U.S. pork for in-home dining. He notes that the food trucks USMEF utilizes for sampling and tasting demonstrations will be adapted to include more educational tools to show consumers how U.S. pork cuts can be easily and conveniently prepared at home – including the use of increasingly popular appliances such as air fryers.
